So, the children are enjoying half term, building up to Halloween and you are by now a little tired and perhaps even looking forward to them going back to school in order that you can put your feet up - even for five minutes in the evening! 

It may have been the latest little "treat" that your adorable young son bought you - like this delightful worm - that has tipped you over the edge...

Or it may be that you just caught sight of your daughter making off with one of the brand new Lotty B Limited Edition PJ jackets that are not even on the website quite yet:

Whatever the cause we thought that you might enjoy this cheeky little cocktail with friends after "trick or treat" to ease away the stresses of the last week or so - just right for Halloween..

Firstly, make your coloured sugar for the rim of the glasses:

Using granulated sugar, add some drops of red food dye until you get your desired colour, then dry the sugar on some baking paper, breaking up any large clumps. Transfer to a shallow bowl.

Put the juice of one lemon in a second shallow bowl and dip the rim of each glass into the lemon juice before dipping into the coloured sugar, and voila! 

To make the beetroot lemonade:

Add the juice of 8 lemons together with 200g of caster sugar and 200g of grated beetroot into a wide topped jug and stir it all together well. Cover your lemonade and pop it into your fridge and leave for a couple of hours so that the flavours develop, but remember to stir it every 30 mins or so to make sure that all the sugar dissolves.

When you are ready for your cocktails, remove the jug from the fridge and pass the contents through a sieve to remove the pulp from your beetroot lemonade.

Pop a couple of ice cubes into each sugar rimmed glass then add 25ml of the beetroot lemonade, 50ml of Aperol and top up with Prosecco, being careful not to spill on to your sugar coated rims!
