The Iguana cocktail was a highlight of New Year's Eve 2024!
In the film adaptation of The Night of the Iguana by Tennessee Williams, the hotel owner serves a rum-coco to a guest at her hotel. The original script suggested the following recipe:
- Chop off one end of a coconut shell with a machete
- Mix the nut's juice with rum, lemon juice, sugar, and cracked ice
- Stick straws in the lopped-off end of the coconut
But if you don't have a fresh coconut (or a machete!) try this version:
1 part coconut rum
3 parts club soda
Generous squeeze of fresh lime
1 park dark rum - as a float
Slice of starfruit (or lime) to garnish
*if you are keeping a "dry" January, remember to save this for 1st February
